Tart lemon, smooth vanilla whiskey and a frothy vanilla-wafer finish make this cocktail worth shaking up.

We were gifted a bottle of Crown Royal Vanilla, and it sat on the counter longer than I expected. I’m not much of a whiskey drinker to begin with, so I kept picking it up, putting it back down and wondering what on earth I was going to do with something that smells like dessert but still means business.

Eventually I decided the only way to figure it out was to stop overthinking and start mixing — because the best way to learn a new ingredient is to play with it.

I had been seeing cocktail recipes that use egg white for that silky, foamy top — like a classic whiskey sour — so I used that as my blueprint. I stuck close to the traditional ratios (spirit, lemon, simple syrup), swapped in the vanilla whiskey and added a few dashes of bitters to keep it from getting too sweet. The first sip surprised me: bright and tart, lightly creamy with that vanilla note showing up like a soft finish instead of a sugary punch. It tasted familiar, but also a little special, like a whiskey sour that had dressed up for company.

Then I had a real use-what-you-have revelation: vanilla wafers leftover from my son’s banana pudding recipe.

I’m the kind of person who refuses to waste food if there’s a way to turn it into something fun. I crushed a few into a fine crumble and sprinkled them over the froth. It was such a small touch, but it made the whole drink feel intentional, with extra vanilla aroma, a hint of nostalgia and a garnish that actually had a purpose.

That’s the thing I’ve learned about experimenting in the kitchen or at the bar: Don’t be afraid to use what you’ve got or tweak a recipe you already trust. Some of my best “new” recipes have come from a gifted ingredient, a half-empty pantry and the decision to just try it.
