Brown the pork chops on the stove in an oven-safe pan over medium/high heat in 2 tablespoons of butter. Sprinkle with salt and pepper while browning. It will only take about 5 minutes per side; you do not want to cook them but only to brown them.
Remove the pork chops and set aside. Remove the pan from the stovetop and layer the bottom of the pan with all the sliced apples.
Mix the sugar and cinnamon and sprinkle over the apples. Dot the remaining 2 tablespoons of butter all around the apples. Add the sherry over the apples.
Place the pork chops on top nuzzled down in the apples. Cover and bake in the oven for 1½ hours.
