Citrus, Meet Caramel

When life hands you a pile of lemons, don’t just make lemonade—brûlée those bright little beauties until they’re caramelized and fragrant, then turn the whole moment into a full-on party.
These glossy, caramel-topped lemon cups arrive at the table looking elegant and unexpected — served right in their own shells like nature’s fanciest dishware. Tap the caramelized top with a satisfying crack to reveal a silky lemon custard that tastes like sunshine with a hint of vanilla.
They look like something you’d order at a coastal bistro, but you’re holding them in your hand at home.
This Lemon Brûlée makes a perfect friends-and-family dessert. Whether it’s a family cookout, a graduation get-together or a backyard dinner with neighbors, these are the kind of treats people swoon over while they’re eating them and talk about long after. Because they’re served in the lemon shell, they’re already dressed up, no fancy plating skills required.
May is when everything speeds up into what’s known as May-cember, because it’s basically December-level chaos, just with more sunscreen. End-of-school events, holidays, community happenings, graduation parties, outdoor festivals, field days, teacher gifts, “one more thing” on the calendar every single week … it’s a lot.
And it was right in the middle of that busy stretch that I created this recipe. I needed something that felt celebratory and impressive but didn’t require me to spend the whole day baking while life was already moving at full speed.
Besides how good these taste, the best part is how simple they are. It’s only a handful of ingredients — lemons, cream, sugar and vanilla — and the method is simple — warm, stir, pour, chill, brûlée. No complicated steps, no layers, no decorating marathon. The lemon shells do the heavy lifting, and that quick torch-to-sugar finish gives you the “wow” factor in about 30 seconds flat.
On a hot summer day, these are exactly what you want. They’re light, cool and refreshing with bright citrus, a creamy texture and that crisp caramel top that keeps each bite interesting.
These lemony treats have that signature fresh lemon punch that brings a little brightness to any party.

6 brûlée cups

- 4 large lemons
- 1 1/2 cups heavy cream
- 3 tbsp sugar
- 1/2 tsp vanilla extract
- zest of lemon
- additional sugar
- mint leaves

- Note: You will need a blowtorch. If you do not have a blowtorch and/or do not serve in the lemon shell you can use small oven-safe cups and place under a broiler to melt and harden the sugar tops.
- Cut three of the lemons in half, juice the lemons, strain and remove pulp and seeds. Save the lemon shells for cute serving cups. You might need to trim the bottoms, so they sit evenly.
- Zest the remaining lemon. (You are not going to use the rest of this 4th lemon so you can use it later on another recipe.)
- In a saucepan, mix the heavy cream, sugar, vanilla and lemon zest over medium heat, stirring until it simmers but do not boil.
- Remove from heat, stir in lemon juice and let it cool for 10 minutes.
- Pour into lemon shells and refrigerate for 2 to 3 hours until set.
- Sprinkle each cup with sugar and use a blowtorch to create a caramel shell before serving.
- Garnish with a mint leaves.
- Note: This recipe will yield more custard than will fit in the 6 lemon rind shells so you will have extra for oven-safe cups.
