This classic cake is bursting with summer berry goodness.

Coffee cake is a favorite classic. It is a dense, sweet cake with a crunchy cinnamon topping, and it smells fabulous when baking. It is typically served for breakfast with fruit or for an afternoon treat with tea or coffee, hence the name.

A buckle is a cake that starts with this same cake recipe, but fruit, like blueberries or apples, are added, and the cake buckles and engulfs the fruit while baking. Served with vanilla bean ice cream or fluffy whipped cream, blueberry buckle is delicious and bursting with berry goodness.

This recipe has a bit of lemon zest added to the cake batter and gives the cake a wonderful bright flavor. Blueberries and lemon are a great summertime combination.

Recipe Blueberry Buckle

I always dust my fresh blueberries with a bit of flour so they fold into the cake easily and do not clump together. This makes a fresh yellow cake with fruit spread evenly throughout. But frozen blueberries can be used in place of fresh, the berries and their juice may mix with the batter a bit and turn the cake a bit blue while baking. But you will still have the same great flavor.

Blueberry Buckle is finished with a delightful cinnamon streusel-like topping. This last layer of goodness really makes the cake shine. It gives just the right amount of sweetness and crunch to this yummy summer treat.

Blueberry Buckle Recipe
Instructions
  1. Preheat the oven to 350 degrees F. Spray the bottom of an 8x8” (or 9x9”) baking pan with cooking spray.
  2. Mix the topping ingredients in a medium bowl and set aside.
  3. Toss the blueberries gently with 1 teaspoon of flour in a small bowl and set aside.
  4. For the cake, mix together the dry ingredients. In a separate bowl, blend together the softened butter and sugar using an electric mixer. Beat in the egg, lemon zest and vanilla.
  5. Combine half of the flour mixture with the wet ingredients and then add half of the milk. Continue alternating flour and milk until all is incorporated. Batter will be thick and fluffy.
  6. Fold in one cup of blueberries and mix gently by hand. Spread the cake batter in the prepared pan or baking dish. Sprinkle with the remaining cup of blueberries.
  7. Sprinkle with the cinnamon topping. Bake the cake for 40 to 45 minutes until a toothpick inserted in the center comes out clean.
  8. Serve Blueberry Buckle with vanilla ice cream or sweet whipped cream.
