This beautiful and flavorful spiked cream soda is the perfect accompaniment for reminiscing about the good old days.

I’ll be honest, the first time I tried cream soda I was not a fan. I was only 9 or 10 years old, and it was the first time I had consumed something that was fizzy, sweet, creamy and tart all at the same time. As I reached the bottom of the glass, the combination of complex flavors grew on me.

Now that I am older, I can appreciate the fragrance of raspberry mixed with bubbly club soda and a smooth creamy finish. Although the version I had in my youth will always resonate, this adult version of raspberry cream soda is worth a toast.

In high school I had a tight group of girlfriends — we all graduated and went in different directions following our dreams. Over the last 20 years some have gotten married (a few times), some have had kids, others are climbing the corporate ladders, and we have always been there for each other during these life moments. We can go years without seeing each other and pick right back up where we left off.

It has been almost eight years since we have all been together at the same time, but we changed that last week. We met up for a little reunion, just us girls, and I created an adult raspberry cream soda for us to enjoy while we caught up. With just a few ingredients, these were super easy to make and made for a beautiful presentation. My friends’ faces lit up when I started handing out these cocktails and we toasted to the class of 2000.

We laughed, talked about our spouses and kids, reminisced about the good old days and sipped cocktails that took us back to our younger days. The next time you get to catch up with your gal pals, think of this beautiful and creamy cocktail. Cheers!

Raspberry Italian Cream Soda
Instructions
  1. Pour 2 ounces of Chambord into the bottom of each tall glass.
  2. Then add ½ cup club soda in each.
  3. To that, add ½ teaspoon heavy cream in each.
  4. Top with whipped cream and raspberries for garnish.
