Paul’s of Oak Island has a new head chef. Chef Jason Talbott brings his unparalleled culinary expertise to the forefront of Oak Island’s premier sports bar. With a distinguished career spanning more than 25 years, Talbott is already elevating the dining experience at Paul’s through his innovative approach to Modern Appalachian Cuisine.

The introduction of a new restaurant adjacent to the sports bar, featuring Chef Talbott’s culinary creations, is open Wednesday through Sunday from 5 until 9 pm. This new dining experience offers guests a refined setting and an elevated menu.

Talbott’s culinary journey began at the prestigious Pennsylvania School of Culinary Arts, where he honed his skills before venturing into restaurant ownership. As the former proprietor of Beverly Bistro in Beverly, West Virginia, Talbott garnered acclaim for his creative interpretations of Appalachian classics. His deep-rooted connection to the region, coupled with his extensive experience, makes him the perfect fit for Paul’s of Oak Island.

Prior to joining Paul’s, Talbott served as a key member of the culinary team at the esteemed Member’s Club in St. James, where he further refined his craft over five years of dedicated service.

Now, as the head chef at Paul’s of Oak Island, Talbott is eager to introduce his unique culinary vision to the community.

“I am thrilled to join the talented team at Paul’s of Oak Island and bring Modern Appalachian Cuisine to the forefront of the dining scene,” Talbott says. “My cookbook is a celebration of the rich culinary heritage of the Appalachian region, and I am excited to share these flavors with our guests at Paul’s.”
