The PCBLT — that’s code for extra delicious — combines two tried-and-true favorites in one tasty sandwich.
I grew up with pimento cheese as a staple in my home and have continued that tradition through my adulthood. We often eat it on burgers, chili, avocado toast or simply on a cracker. My mother-in-law recently served us her homemade pimento cheese alongside barbecue. I have been making pimento cheese for as long as I can remember, but there was something extra delicious about hers. I had to get the recipe so she gave it to me.
I tend to eat lots of heavy comfort foods in the winter months, so by the time spring season finally arrives, I eat more salads, fruits and fresh vegetables. Naturally, BLT sandwiches are perfect for spring because they are crisp, fresh, flavorful and colorful. I recently made my mother-in-law’s homemade pimento cheese recipe and added it to a BLT for a creamy and savory punch to the classic sandwich — and it was extra delicious.
You can certainly go to the grocery store and purchase a container of pimento cheese, but I assure you that it will not be as creamy or tasty as this homemade version. I highly suggest you shred your cheddar cheeses yourself — believe me, it makes a difference. You can also adjust the amount of hot sauce depending on your desired heat preference.
For the BLT, thick-cut bacon is my favorite because it gives the most crunch, flavor and texture. You can use thinly sliced bacon if you prefer, but you might need more than just three slices per sandwich.
This combination of fresh tomatoes, creamy pimento cheese, crispy lettuce and flavorful bacon makes the perfect lunch or easy weekday meal. If you love sandwiches, this is one you must try. Serve this with your favorite chips and maybe you can impress your mother-in-law the way mine impressed me.
